    so this 1 dac per projector scheme will need some sort of usb hub i suppose (which can also host the usb dongle)

    Well I guess that depends on how many USB ports your computer has natively. You simply need enough ports for everything you need to plug in, taking care to ensure that the USB bus has enough 'oomph' to power everything appropriately. Some people choose to use a powered hub for these reasons, but its not an absolute requirement.
