Well any decent MIDI program would do. I use Reaper, which is also great for mixing MIDI with audio. In fact it's great for any MIDI or sound related thing you want to do on a computer. You can get a free evaluation license for 30 days, after which you will agree with me the program is so awesome that you will buy the official license out of free will (because though you must buy a license after 30 days, the evaluation license will never expire!).

If you're in the MIDI editor, right-click on the timeline on top of the editor panel (the MIDI editor, not where your tracks are), select View and then Mode: named notes.

Works great for VST's too. Now only find a way to reduce latency...
