Sounds complicated to me (especially in 2 days). Have you considered using lasercam? This is quick to set up with Kinect and gives awesome results - although different to the result you mentioned above.

If you had Beyond at your disposal I would imagine its as simple as setting a DMX channel value to the X or Y position value and away you go.
Maybe go via a channel.
Some simple Pangoscript might help in the middle to give you a degree of scaling control.

The same concept probably applies to any of their applications that support DMX in, I just haven't looked at it in LP, and I don't own Showtime.
