Because you don't want to run 40m of ILDA-cable from projector to DAC, or you want to have it wireless?

Besides, ethernet is much easier to extend (switches) then ILDA-cables.

Another good point from my experience:

When you are working on an all nighter and you just want to get home to bed, you suddenly find yourself waiting around for the lighting rig to come down so you can retrieve your expensive DB25 cable. With Ethernet, the cable is so cheap you can cost it in to the job and leave it behind. Then you can get some of that lovely sleep

I wouldn't leave the cable in every time, but if it's one of those gigs where they are making life difficult, then fuck 'em - they can have it.
