If your projectors have two DB-25 ports (1 male, 1 female) on the back they support ILDA through. I'm pretty sure you can daisy-chain two projectors using these ports, but they will each get the same signals.

Well what I would really like is for one projector to have the X- inversed. I'm familiar with daisy chaining intelligent lights but with DMX I make a fixture inverse with the controller.

    Thanks for your help

Depending on the design of the projector it could be as simple as crossing the X+ and X- signals over. If that does not work you can use an op-amp to invert the signal. There's probably a design for that circuit somewhere on this forum already..

couldn't you just mount the projector upside-down?

That would invert X and Y

    good point.

I think there's something you can use to do that. this might help: http://www.winfordeng.com/products/brk25.php

you could also wire an "invert x" switch to your projector.

on your scanner amps you should have 4 jumper pins on each and all you have to do is turn the jumpers 90 degrees and you are done... as for running both projectors off the same signal, just get 2 female and 1 male db25 ribbon cable connectors and a small bit of 26wire ribbon cable and you are there...
