I am not sure what the problem is but it keeps on turning off and is hard starting, sometimes it won't even start at all... It is doing ok power and feels cold to the touch.... Any ideas?

I had a similar problem with one of my melles-
i was told that it was the xtal temp setting. i neither confirmed nor denied that though.
do you have the software to log onto your PS for the head? see if your readings are ok??
melles are just HORRENDOUS for show use. i know they were the standard years ago. but these days, they just are poop. your 3W is prob more like 1.5 or 2 once it starts modulating.
it could also be one of the fiber feed emmiters (i dont know if i am saying that right. sorry) in the head. i had a great internal pic of it once but of course i cant find it. i got it on Sams tohugh. theres an array of like 18 fiber feeds i think. and those are known to go bad! once that happens, all hell breaks loose with the head. not turning on, not lasing, turn on and turn off...
sorry i couldnt help more. but these are some ideas.

Regarding xtal temp I remember reading that the controller may not shut down if that was the case.
Read up here @ about 3/4 down Melles repair starts, it might give you some idea to what is the cause.

You might check the thermistor in the power supply.
Mine became finicky after it was jarred by the motion of my laser projector flying down an escalator in my carry-on bag in August. (Fortunately, some random woman was nice enough to catch it with her shins.) <shrugs>

They all seem to have the DB9 port. You just need the circuitry on the inside to go along with it.
If there's a daughterboard in there that interfaces with the serial plug, you should probably be able to hook up the Melles Software.
